I went to a gluten-free/dairy-free/egg and soy free cooking class last night at PCC Markets. I am beginning to become obsessed with that store. The class was about baking without these common allergens so they had a chef, but they also had an N.D. (Naturopathic Doctor) there talking about food related allergies and intolerances. The Chef was Reginald Beck of Fearless Bread and the N.D. was Dr. Stephen Wangen.
